I haven't made this (though having made many batches of hummus I see no reason it shouldn't be quite tasty). I just wanted to comment on what an excellent idea it is to post recipes for foods compliant with special diets. I remember my mother's frustration cooking what she called a "No Food" diet for a friend after his surgery. This may never be your top-rated or most popular recipe, but I'm sure that some people in challenging circumstances are going to be glad to see it.
