This is such a good breakfast dish. It makes me feel "ritzy". But seriously, it is very good. Make each serving the same way. This is ONE serving.

SERVES 1 , 1 serving (change servings and units)

Ingredients

Directions

    Poach egg.
  2. 2
    Lightly toast English muffin half.
  3. 3
    Top with ham slice, (tucking square corners under to conform to round muffin).
  4. 4
    Top ham with poached egg.
  5. 5
    Cover all with 3 tablespoons Hollandaise Sauce.(See recipe #25113)for (Quicky Hollandaise Sauce).
  6. 6
    Sprinkle with paprika (if desired).
  7. 7
    SERVE AT ONCE.

    Wow, that is so easy to make, and taste great as well. I used the hollandaise sauce out of a jar, that was the only difference, and I should have poached my eggs a minute longer than I did. And I forgot to sprinkle it with paprika. Never mind, next time I won't forget the paprika, because there will be a next time!!!

    Delicious! I have never had eggs benedict and I came across this recipe this morning so I gathered everything I needed and made me a plate. I used Hollandaise Sauce Hollandaise Sauce for my sauce. It was great! Thanks for sharing your recipe!

    I make this same recipe often, only I don't add any paprika and I use a lot less sauce on top of each muffin, probably only 1 Tbsp. I either make my own sauce, or I mix up a package of Knorr Hollandaise sauce. A great way to use up some leftover holiday ham.
