Eggplant (Aubergine) Tomato Deluxe

This is a simple, easy and low-fat recipe.

SERVES 4 (change servings and units)

Ingredients

    Preheat oven to 400 degrees F (200 degrees C).
  2. 2
    Spray a cookie sheet with non-stick oil spray.
  3. 3
    Arrange eggplant rounds on the cookie sheet and sprinkle Parmesan over the eggplant.
  4. 4
    Can peel the eggplant also, if preferred that way.
  5. 5
    Layer one slice of tomato on top of each eggplant round. Sprinkle with Parmesan cheese.
  6. 6
    If using olive oil, brush the eggplant with olive oil then add seasonings, then parmesan and tomato.

    Can also add slices of onion or fresh mushroom to make this a deluxe meal of yummy veggies.

    Feel free to add additional variations of cheeses.

    Bake for 10 to 15 minutes.

    Made this for Dh's dinner and there was nothing left when I got home. I didn't get much in the way of comments, just a satisfied grunt and, "hmm-good." I skipped the olive oil and used the optional fresh herbs, onions and mushrooms.
