Ingredients

Directions

  1. 1
Place a mesh strainer in a large non-glass bowl set in an ice water bath. Set aside.
  2. 2
In a medium saucepan, off heat, stir together sugar, cornstarch and spices. Whisk in 4 cups cold milk, being sure to dissolve cornstarch. Whisk in egg yolks.
  3. 3
Over medium heat, whisk constantly until large bubbles start to form, 10-12 minutes. Reduce heat to low and cook 1 minute more, still whisking constantly.
  4. 4
Remove from heat and pour through sieve into bowl. Whisk in remaining cold milk. Allow to remain in ice bath until fully cold.
  5. 5
Stir in brandy just before serving. Serve in martini glasses garnished with a pinch of pumpkin pie spice.
