Eggless, Milkless, Butterless Spice Cake

I found this recipe in the newspaper twenty years ago. I was impressed by the author's stories about life in the homefront during WWII so I decided to try this recipe. It was very good even without the allspice.

1 square pan (change servings and units)

Ingredients

Directions

    Stir together flour, cornstarch, baking soda, spices and salt.
  2. 2
    Cream sugar, oil, lemon juice and vanilla.
  3. 3
    Add flour mixture to sugar mixture, a little at a time, alternating with up to 1 cup of water.
  4. 4
    Mix briskly with fork until thoroughly blended.
  5. 5
    Pour into lightly greased and floured 8 or 9 inch square pan and bake at 350 degrees for 30 minutes or until cake tests done.

    Let cool in pan.

yummy! I didn't have eggs in the house and really wanted to make something sweet. These are excellent! Perfectly moist! Next time I will make a double batch, though, as they only made 5 large muffin cakes.

    Made for All New Zaar Cookbooks Tag. What a nice cake. This would be great with cream cheese frosting on it, but it's pretty good all by itself. I like the fact that it's made with stuff I always have in my pantry. Thanks for posting this!

    It was a work-friends birthday last week and I promised to make a cake to take into work. Found this recipe and thought I'd give it a bash. Instead of the flour / cornflour / baking soda combination, I replaced this with self-raising flour (UK) and it came out so well that people have asked me to make again. Very moist cake. I was worried that the spices might be a bit overpowering but it was fine. Everyone that had some wants some more.

    I made this today on a whim, because I was bored and felt like baking something simple. Very tasty cake! Mine fell in the middle though..The amount of spices was perfect! Would be great with some whipped cream on top.
