Egg Noodles With Brown Butter and Feta

This is so quick and easy! From Gourmet magazine. Posted for ZWT 2006

SERVES 6 -8 (change servings and units)

Ingredients

  • 1 lb dried egg noodles or egg pasta
  • 1/2 cup butter
  • 6 ounces greek feta, crumbled

Directions

  1. 1
    Cook noodles according to package directions, until just tender.
  2. 2
    While noodles cook, melt butter in a small sauce pan over low heat until it begins to turn golden brown, about 6 minutes. Remove from heat.
  3. 3
    Spread 1/3 of noodles on a large platter and sprinkle with 1/3 of the cheese.
  4. 4
    Repeat the layering 2 more times.
  5. 5
    Pour brown butter over noodles and toss.
  6. 6
    Season with salt and pepper.

Buttered egg noodles in and of themselves are delicious. The feta adds interest. A lovely side.

    Wonderful side dish for a change of pace. Very simple and a great recipe to make while cooking something else that is a bit more complicated. Thanks for posting. Made for I Recommend Tag Game.

    For something so simple and so easy, this was delicious! the browned butter brought a lot of flavor to the dish and the feta adds a lovely YUM! aspect. Between this and the grilled cheese with feta, I am rapidly becoming a warm/hot feta addict! Thank you so much for posting, made for ZWT4.
