Egg Drop Soup (Restaurant Style)

I came up with this recipe while searching for the perfect "Egg Drop Soup". My picky 9 year old likes it, so I feel it is kid friendly.

SERVES 4 (change servings and units)

Ingredients

    Reserve 3/4 cup of chicken broth, and pour the rest into a large saucepan.
  2. 2
    Stir the salt, ginger and chives into the saucepan, and bring to a rolling boil.
  3. 3
    In a cup or small bowl, stir together the remaining broth and cornstarch until smooth.

    Set aside.
  5. 5
    In a small bowl, whisk the eggs and egg yolk together using a fork.
  6. 6
    Drizzle egg a little at a time from the fork into the boiling broth mixture.
  7. 7
    Egg should cook immediately.
  8. 8
    Once the eggs have been dropped, stir in the cornstarch mixture gradually until the soup is the desired consistency.

My family really loved this soup. I needed something else to go with my "chinese type" meal and this fit the bill perfectly. This is an easy soup to make and I will make this again and again. Thank you for sharing this with us.

    Easy and good. so much so that I won't pay another $2 for it when I have takeout. Its a lot of egg, maybe a little too much.

    We all loved this. I got my broth by cooking 3 boneless chicken breasts with about a cup each of celery, onion, and later carrots, then adding the chicken because we like meat, but this was a great basic recipe. Thanks Chippie!

    Yummy, easy to make Egg Drop Soup. My DH who loves egg drop soup said this is VERY VERY good. I made it just as stated using canned chicken broth. Thank you very much for posting this easy to make recipe.
