One of my kids' favorite breakfasts, and so quick and easy too! I always have these ingredients on hand. They can even make these themselves! The ingredients are for one burrito, by you just multiply by how many servings you're making.

SERVES 1 (change servings and units)

Directions

    Whisk the eggs together with a little salt and pepper and a tiny splash of water.
  2. 2
    Either spray a nonstick pan with cooking spray, or put a dab of margarine in pan.
  3. 3
    Add the eggs to pan and gently scramble until light and fluffy.
  4. 4
    Heat tortilla over open flame of burner and few seconds per side until heated.
  5. 5
    Spoon eggs down center of tortilla and top with cheese and a little taco sauce.

    Roll up burrito style!

This was a nice little lunch today. I used a cheddar and monteray jack cheese mixture since I had some on hand. Very tasty. Made for Jammin' Java Jivers ZWT5

    Buenos dias and gracias for this tasty way to mix up my usual breakfast. Normally, I have a bowl of cereal so this really was different in a good way. The only difference I made was to add in a bit of guacamole that I had left over from the night before and to use a cheddar and Monterrey jack combo for the cheese. Made for Chow Hounds on ZWT5.

    My family LOVED these for dinner last night. I threw some hashbrown patties in the oven and tossed a bowl of fruit together to go with it. My boys asked me if I'd give them the recipe when they grow up.
