Edamame Salad

This salad combines healthy veggies with a minimal amount of oil, without losing any of it's flavor.

SERVES 8 (change servings and units)

Ingredients

Directions

    Prepare edamame according to package directions. Drain and rinse with cold water. Set aside to drain thoroughly.
  2. 2
    Combine edamame, corn, red bell pepper, green onion, red onion, parsley, and oregano.
  3. 3
    In a large bowl, whisk lemon juice, mustard, olive oil, salt and pepper. Add veggies to bowl and toss to coat. Refrigerate until ready to serve.

This dressing is fabulous! For the salad, I just used what I had in the fridge — edamame, cucumber, onions and tomatoes. The family devoured it!

    Amazing! I halved the recipe, used a orange bell pepper, dried oregano. I poured the hot water from boiling the edamame over the frozen corn kernels to wake them up. The dressing has a wonderful flavor. This salad will be a regular staple in our home. Thanks for posting this FAB recipe dawnie2u!

    This recipe is so good!!! I make it all the time. The last time I made a triple batch of the dressing--with the intent of using the rest on other salads. I ended up using it as a marinade for chicken breasts which is really good as well.
