At Fourth of July cookouts or Christmas family and church get-togethers, I am always asked to bring this. This is even what my daughter asks me to prepare as her birthday cake. Simple to prepare but elegant tasting. I have tried versions with regular chocolate frosting but this is so much better. I hope you enjoy this recipe.

SERVES 16 , 1 cake (change servings and units)

Ingredients

Frosting

  • 1 (1 ounce) package Choco-bake (unsweetened liquid chocolate)

  • 2 teaspoons white Karo
  • 2 teaspoons vanilla
  • 3 tablespoons soft margarine
  • 1 1/2 cups powdered sugar
  • 3 tablespoons milk

Directions

    Cake-----------.

    Butter 9x13 inch pan and layer with whole graham crackers.
  3. 3
    Mix pudding and milk.
  4. 4
    Blend in cool whip.
  5. 5
    Put 1/2 pudding mixture over crackers.

    Layer more crackers over pudding.
  7. 7
    Top with rest of pudding.
  8. 8
    Cover with a layer of crackers.
  9. 9
    You will have 3 layers of crackers.

    Refrigerate for 2 hours before frosting.

    Frosting-----------.

    Beat all frosting ingredients until smooth.

    Frost cake and refrigerate 2 hours.

    Can be frozen.

I'm shocked I haven't rated this sooner as I have used this recipe for several years. It is SOOOOOO good! I usually halve the pudding graham cracker part and keep the frosting the same amount. I think it is best with double the amount of frosting.

    This is an almost identical recipe to mine, Chocolate Eclair Cake. The reaction that I receive when I make this cake is phenomenal! People think that I have slaved away in the kitchen for hours to make this delicious creation! I submitted my version of this recipe to "Incredible Edibles", a fund raising cookbook for the Miles of Hope Breast Cancer Foundation. My husband labeled it as "the very best"! I originally got my version of the recipe from a fund raising cookbook for my church. Never underestimate the value of local fund raiser cookbooks or this web site! That's where you will find the tried and true recipes!

    When I was a child my Mother always made a recipe similiar to this one. It was just the graham crackers and pudding layered, ending with the pudding which she sprinkled with graham cracker crumbs. Reading it brought back memories of my Mom and I thank you for that. Will definately try it as posted here. I have rated it a 5-star because I know how wonderful my Mother's was, and I'm sure this is as well.

    I've made a version of this for many, many years. Suggestion: use two layers of graham crackers and filling; spread top with your favorite fruit pie filling. YUMMMMMMY and pretty. Happy to find new way to prepare. THX!
