Easy and Tasty Barbecue Chicken Sandwiches in the Crock Pot

This is almost too easy to be called a recipe, but I had to share it anyway. I came up with it one night when I wanted a nice meal but wasn't feeling too motivated. I love crock pot cooking!

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Remove all visible fat from the chicken and toss it in the crock pot.

    Place the onion slices on top of the chicken.
  3. 3
    Pour the barbecue sauce over top.
  4. 4
    You may not need the entire jar, just enough to cover the chicken.
  5. 5
    Cook it on LOW for 8 hours or until the chicken is nice and tender.

    Shred the chicken with a fork and knife; scoop the mixture onto the bottom buns and top it with the top buns.

    Or, if you're like my dad, you might prefer leaving the breasts whole and eating it that way.

    I love this with potato chips and a carrot and raisin salad.

    I used pork loin instead and it came out soooooooo yummy! My hubby ate 2...lol...thanks for posting.

    This makes wonderful, tasty, flavorful BBQ sandwiches! It is so easy, you won't believe it - perfect for a weekday meal, for entertaining (because you do not have to cook, while guests are there), and the recipe could easily be adjusted for a large crowd. The only things that I did differently was sprinkle the chicken breasts with garlic salt, black pepper, and cayenne pepper; add a few dahses of hot sauce to the BBQ sauce; and throw in some diced green chiles for the last 1/2 hour of cooking time(I, too, shredded the meat during the last 1/2 of cooking time, so that the meat could soak up the sauce and flavors). Served it with BBQ beans and corn, which was perfect with it. Wonderful, simple recipe - thanks for sharing a great idea!

    This is great for an easy meal and my family loved it. I used frozen chicken breasts and used the leftovers for nachos the next day. Thanks for the recipe!
