Easy and Saucy Crock Pot Pork Chops - Healthier Version!

I originally saw this recipe in a magazine and tweaked it so it would be a bit healthier. We think it even tastes better this way. My kids request this recipe A LOT because it reminds them of bbq ribs. The recipe couldn't be easier. Enjoy!

SERVES 4 (change servings and units)

Ingredients

  • 4 pork loin chops with bone (I get fairly thick chops so they don't dry out in the crock pot)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons vegetable oil (I like to use either canola or olive oil)
  • 2 cups no-sugar-added ketchup (low carb)
  • 1/2 cup packed splenda brown sugar substitute
  • 1 teaspoon hickory-flavored liquid smoke (don't omit this!)

Directions

  1. 1
    Sprinkle pork chops with garlic powder, salt and pepper.
  2. 2
    In a large skillet, brown the pork chops in oil on both sides.
  3. 3
    In a bowl, combine the ketchup, brown sugar and liquid smoke.
  4. 4
    Pour half of the sauce into the bottom of a slow cooker.
  5. 5
    Top with pork chops and remaining sauce.
  6. 6
    Cover and cook on low for 4-1/4 to 5 hours or until meat is tender.

This is a delicious way to prepare pork chops! Since they are so reasonably priced right now I bought center cut chops that were quite thick and just let them cook, while we were out for the day. What a wonderful aroma to come home to! Made as directed although I did use regular ketchup and brown sugar. Also dumped in sliced yellow onion and sliced fresh mushrooms that needed to be used up. Thank you LifeIsGood! This will be used often when I go back to work! Made for KK's Mini Cookathon for LIG's Bonus!

    We really, really enjoyed these pork chops. They were saucy and moist and the liquid smoke flavour really adds to them. I made one small deviation in the preparation. After they were finished, we tossed them on the hot grill for a few minutes, then served them with more of the sauce on top. It sort of candied the sauce on them, and they were just awesome!     This is a real nice recipe for chops, and seriously couldn't be easier then putting chops in the pot & coming home to a wonderful, delicious treat. I followed this exactly, except I used regular ketchup, regular brown sugar, and added the onion, and some garlic as suggested by other reviewers. At the end, I put the chops on a warmed plate, and added 1 teaspoon of corn starch with cool water to make a slurry and added to the "gravy" to thicken it a bit, and spooned the thickened sauce onto some rice/ and chops. Delicious! Thank you LifeIsGood!

    This is getting 5 stars even though I ended up not following the instructions! I am rewarding the stars for the wonderful taste. I am sure your method is also wonderful but I forgot that I was doing crockpot today and didn't realize it until it was much too late. I did have the pork chops thawed so decided to go ahead with it and use the oven for slow cooking. I browned the chops and used only half of the sauce recipe and put them in a 9x13 pan, covered with foil. I had the oven set at about 300F. All worked well until I had to turn up the temp (after 2 hours) for another dish and then the sauce started burning a bit. I quickly removed it from the oven and let it rest. While it was cooking my son asked if we were having ribs. Yes, it smelled and tasted delicious. I did like the was the sauce carmelized onto the chops, so good. But we did miss the sauce that we would have had from the crockpot (well, my husband did!). I just may do the recipe in the oven again but will watch the temp. very carefully. The smoky BBQ flavour was excellent and so were the tender chops. Thanks for sharing your recipe. Made for PRMR
