Easy and Moist Deep Chocolate Chocolate Chip Cake (Or Cupcakes)

Not only is this cake so very easy, it is so good and probably the only cake you will ever make! This can also be baked in a 13 x 9-inch baking pan for about 40 minutes or make cupcakes! Frost with your favorite chocolate frosting or see my Kittencal's Chocolate Buttercream Frosting/Icing or lots more ideas for frostings in http://www.recipezaar.com/mycookbook/46458 If using devil's food cake mix you can omit the instant coffee granules if desired.

SERVES 10 -12 (change servings and units)

    Preheat oven to 350 degrees F.

    Grease and lightly flour two 9-inch round cake pans.
  3. 3
    In a large bowl using an electric mixer beat together cake mix with mayonnaise, water, eggs and cinnamon for about 2 minutes on medium speed.

    Divide the batter between the two cake pans.
  5. 5
    Bake for about 25-30 minutes or until the cakes test done.
  6. 6
    Cool for 10 minutes in pan then remove to a rack to cool completely.

    Frost cooled cake with chocolate frosting.

AWESOME!! I made these as written except I left out the instant coffee because I didn't have any. I made cupcakes and got 28 out of them, baked 20 min in a silicone pan. I used a .89cent Cinch cake mix. These are a wonderful, affordable after school snack for the kids or a tasty little piece of chocolate heaven for adults.

    These are so wonderfully moist and delicious Carol. The mayo, cinnamon and coffee are a nice addition to your typical cupcake. It takes the box recipe to a whole new level. Thanks I should mention that I always use your Authentic No Refrigeration Bakery Frosting/Icing for frosting.~

    Oh my - dangerous recipe!! Made these to bring to the office and they were gone in a manner of minutes!! Used chocolate chip cake mix and used low-fat mayo. Thee turned out so moist and so tender - it was hard not to eat them all!! Thanks Kit!!

    If you are a chocolate lover, you will love this. I made it in a 13x9-inch baking pan to take to a party and I came home with nothing left. I made the chocolate buttercream frosting to go with this and it was delish! The cake is very chocolatey and very moist and I'm picky about my chocolate cakes. This is a winner!
