Easy Vegan Pancakes

    In a large bowl, lightly mix all ingredients until just combined.

    Overmixing will make the pancakes tough.
  3. 3
    Leave mixture on the counter to rest for 3-5 minutes and then fold it onto itself two or three times, lightly to make sure that the batter is fairly well incorporated.

    Cook on a greased skillet or griddle over medium to medium high heat until golden.
  5. 5
    If there are large lumps, carefully break them apart with the spatula while the pancakes are cooking.

    Serve immediately.

These got raves at my house too.....I used water.......the pancakes were delish, and this recipe makes a bunch! This just might replace my old recipe!

    Thank you, Thank you, Thank you. I'm not a vegan, but I was out of both milk and eggs today and unable to leave my home. The roads are blocked off because of the fire that has been burning for 2 days now. I have a house guest and was at a loss of what to make for Sunday breakfast. I made this recipe as posted...using water instead of soy milk. I added some chopped sauteed apple and a little more cinnamon. These pancakes came out light and fluffy and got raves. I will never use my old recipe again. THANK YOU!!!!!

    This was a good recipe, since I was out of soymilk. I only had wheat flour and so according to a website you should only use 7/8 c of wheat flour as sub. for 1 c white flour. So, I used 2 1/4 c wheat flour. I also increased the baking powder to 3 tablespoons which made them fluffy. Plus I added a tsp. of vanilla for flavor. yummy!

    yummm. delicious. made them with water because i'm out of soymilk and they were still good. added a little lemon oil flavoring instead of regular oil.
