Easy Taco Soup

Recipe #279238 | 25 min | 5 min prep | add private note

By: Xavier's Mom
Jan 16, 2008

This recipe I created by taking multiple recipes and using what I thought was the most simple and flavorful ingredients to create a quick and tasteful soup.

SERVES 8 -10 (change servings and units)

Ingredients

Directions

  1. 1
Brown hamburger and onion in large pot.
  2. 2
Add the seasoning packets with one cup of water to browned meat and onion.
  3. 3
Then add the remainder of the ingredients into the pot and cook on medium heat for about 20 to 30 minutes. When the hunger gets too much, turn down to low and serve.
  4. 4
Add the diced avocado, shredded cheese and sour cream to the top of the soup for added taste.

This was an excellent soup, full of flavor. I used Rotel diced tomatoes with chilies since they are spicier than regular canned tomatoes. I did not drain the black beans but I did drain the kidney beans before adding them to the soup. I also omitted the pinto beans because I don't care for them. I made the mistake of using Hot & Spicy taco seasoning instead of regular. The flavor was still good but my mouth was on fire for 30 minutes after eating the soup. If you love to set your mouth on fire I recommend using the hot & spicy seasoning mix in this soup. I topped with sour cream & cheese to help mellow out some of the fire. :P Made for PAC 2008

This was a very good Taco Soup. I made it as posted with the exception of making the ranch dressing mix from Ranch Dressing and Seasoning Mix, which is a gluten-free recipe mix. Made this for PAC 2008. Must encourage you to post more, this was good.

Excellent taco soup that is easy to make! I did not drain the beans which really gave the soup a lot more flavor. You can have this on the table in under 30 minutes. Just the kind of weeknight recipes I need. I picked this chef for the Spring PAC 2008 game
