Easy, rich, fast and yummy dessert. Your guests will never guess the crust layer is saltines! Pretty enough for company but easy enough for everyday! Time to make does not include refrigeration time- 4 hours Very yummy made with fresh strawberries from Mexico, Texas and California.

SERVES 10 -12 (change servings and units)

    Mix pudding mix and milk-(skim or low fat is fine) and beat on low for 2 minutes.

    Fold in Cool Whip- can be low or non fat.
  3. 3
    Place 12 crackers in bottom of 8" square dish to cover bottom, break crackers if needed. Breaking also helps disguise the saltines.

    Top with 1/3 of the pudding mix.
  5. 5
    Repeat to create a total of three layers of crackers and three layers of pudding.
  6. 6
    Cover and refrigerate for at least 4 hours.
  7. 7
    Just before serving top with cleaned and sliced berries.

    Note: Vanilla and strawberries are my favorite combo but try with different types of fresh fruit using what is in season. Also try different pudding flavors keeping in mind that lighter colors disguise the saltines the best!

WOW, who knew that saltine crackers and pudding could taste this good! Revelation! This dessert couldn't any easier and can be varied with fruit of the season. My extremely picky DH even loved it (and thats rare). Thanks mama for a new take on how to use whats in the pantry.

    The presentation is not as pretty as I hoped, but the saltines with the pudding was surprisingly delicious. No one guessed.

    WOAH MAMA! This was sooo good! I made it with sugar-free pudding and could NOT tell! Me and Poopie Head Doctor are on low-carb diet, so I'll be sharing with him too. I ate my first piece without fruit so I could taste and see if you could tell it was saltine crackers...NOPE! Definately a new way for me to use crackers, and I'm sure even if they're stale they'll work. Also a VERY inexpensive fancy-schmancy way for me to impress everyone at church. Thanks so much, Mama...this one is a keeper fo' sho'!

    This is so good! I use fat free saltines, fat free sugar free pudding, and fat free cool-whip. Yumm... I highly recommend trying this with cheesecake pudding. Wow!
