Easy Stir-Fried Zucchini and Garlic

This is a quick delicious zucchini dish!

SERVES 4 -6 (change servings and units)

Ingredients

  • 2 lbs zucchini (sliced or diced into cubes)
  • 2 tablespoons fresh minced garlic
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • salt and pepper
  • 1/2 teaspoon italian seasoning (or to taste)
  • parmesan cheese (optional)

Directions

  1. 1
    In a large skillet, saute the zucchini, garlic and Italian seasoning in oil and butter, until zucchini is crisp-tender, about 5 minutes.
  2. 2
    Season with salt and pepper, then sprinkle with Parmesan cheese.

    Serve immediately.

I have a bumper crop of zucchini & was eager to use some up. Why I planted zucchini I'm not sure because i'm not a huge fan...anyways, i tried your recipe & to my complete surprise, our family all gobbled this dish up & really enjoyed it! It was easy, delicious & nutritious-what more could you ask for. Thanks!

    This was so good. I used minced garlic instead of fresh, and I added the cheese during the last couple of minutes in order to let it melt better (that's my taste preference). It turned out really good that way.

    Superbly flavoursome and just so very easy to make: I wouldn't change a thing. That Italian seasoning certainly provided heaps of flavour. Thanks, KITTENCAL, for sharing another super - and so simple to make - recipe!
