My sister-in-law who was born and raised in Mexico City shared this recipe for sprucing up canned refried beans. They taste like you've been cooking them for hours.

SERVES 8 (change servings and units)

Ingredients

Directions

  1. 1
Gently fry the bacon until near crisp.
  2. 2
Add onion to the bacon grease and saute until tender.
  3. 3
Add the refried beans and water.
  4. 4
Stir and simmer until creamy and heated through.
  5. 5
Place in a serving bowl and top with shredded cheese.
  6. 6
The heat of the beans will melt the cheese.
  7. 7
Serve with hot tortillas and/or tostada chips.

Sorry I had to give this 4 stars I loved it but the family said no I think the onion was to much for them. I will make this again but just for myself, if they want refried beans they can make it them selves. you get two thumbs up from me not to mention I used the leftovers to make frozen beef and bean burritos and they are all mine

Instead of bacon I experimented by adding 1/8 tsp of liquid smoke for flavor. They turned out very good. Thanks for the recipe!

This was really good! I didn't have any bacon on hand but will use it next time. I did cut the recipe in half. Instead of the water I used the juice from a jar of pickled jalapeno's. I threw some jalapeno's in also. I like things hot and spicy. Served it along side of "Margarita Fajita Chicken" Margarita Fajitas Chicken. To finish off this excellent meal I prepared once again "Freezer Margarita" Freezer Margarita Thanks, for posting PanNan. Update: 2/4/07 Made these again but with the bacon. I personally feel that the bacon really doesn't add any additional flavor to the beans. More fat! but not more flavor. This time I served them with Yummy Pork Fajitas they came out excellent as always. I also throw the beans in the mircowave for a few seconds. Thanks, again PanNan for posting.
