Easy Lasagna Rolls

This is a great quick recipe that's meatless and light. You can lighten it even more by using lower fat ingredients. Great for kids to make! This is a microwave recipe, but can be made in the oven. Also, ricotta cheese is easily substituted for the cottage cheese, if you prefer!

SERVES 6 (change servings and units)

Ingredients

Directions

    Mix cottage cheese, 1-1/2 cup mozzarella and parmesan cheese with eggs and parsley.

    Place one lasagna noodle on work surface.
  3. 3
    Spread 1/3 cup cheese mixture on noodle evenly.
  4. 4
    Roll up tightly like a pinwheel.
  5. 5
    Place seamside down in microwave-safe baking pan, that has 2 cup of spaghetti sauce in bottom.

    Continue until with remaining ingredients.
  7. 7
    Cover rolls with remaining sauce and sprinkle with additional mozzarella cheese.

    Cover with microwave-safe wrap and microcook on high 10-20 minutes, until cheese is melted.

Delicious. I covered it in foil and baked it for 50 minutes instead of microwaving it. Great.

    These were great! I cooked mine for about 15 min, and still seemed too runny in the middle. To make sure the egg was cooked, I put it in for a few more minutes. Could have just needed a few minutes of setting up. I always have issues "rolling" any food, the filling wanted to bust out, the noodles were slippery, and it was messy...but produced great results. Great go to lasagna on a weeknight. Everyone in the house including 5 and 2 year old girls gobbled it up. Thanks for posting!

    What a great idea - baking lasagna in the microwave. This recipe is DEFINITELY a KEEPER! My lasagna loving husband liked it, my picky picky DD loved it. I made 16 rolls, froze half for easy lunches. I made it according to recipe (although I was shy on the parmesan, didn't know I was out) with my own red sauce. I guess if you use a very bland red sauce, it could turn out bland. I really loved the fact that this could be microwaved. The only trouble I had making this recipe was trying to figure out how long to cook the oven ready lasagna noodles I had on hand! I boiled them for about 7 minutes and they were perfectly pliable for rolling and tasted perfect.

    MMM-MMM!! These were so good last night - I can't wait to have the leftovers for lunch! I don't really like parsley, so I added basil instead! I was going to cook the full box of pasta but about 3/4 of the noodles ended up fitting in the boiling pot, so I had to kind of wing the rest of the amounts of ingredients! I put in a couple healthy scoops of cottage cheese, a handfull or two of Italian and Mozz, a copped up tomato I had on hand, and some garlic salt. I don't think this recipe would be too easy to mess up because I measured nothing but it still turned out great! THX!
