Worthy of the ratings! These were great, cheap and easy, and will definitely be a regular in our house. Note: it did take more like 45 minutes of cooking time to get the rice fully cooked

Made great inexpensive tacos, - nice inside crunchy shells. With the other toppings they were as good as beef. I reheated the leftovers topped with cheese and guacamole, and that was good, too However, at high altitude the brown rice takes much longer to cook then the lentils, so if I make this again, I'll start the rice and then add the lentils 10 or 15 minutes later, so they don't get so mushy. (I don't cook with brown rice very often...)

Delicious! I dumped all the ingredients in my crock pot and cooked it on low for about 6 hours. It came out perfectly. Great recipe!

We are total carnivores but LOVED this vegetarian meal. We used it as burrito filling and I doubled the recipe and froze half in the bottom of a casserole dish for a taco casserole later. So yummy! I don't think we'll ever use taco meat again!
