Easy Egg Drop Soup

Easy and yummy. Perfect for sick tummies.

SERVES 2 (change servings and units)

    Heat broth in saucepan to boiling.
  2. 2
    Meanwhile, scramble eggs well. You can add the cornstarch to help keep the eggs in larger lumps in the soup.

    Remove pan from heat once broth is boiling.
  4. 4
    GENTLY stir in eggs. The more you stir the smaller the egg 'drops' will be.

    Taste. Add salt if desired. Onion salt is really yummy here!

    Garnish with chopped green onion.
  7. 7
    NOTE: for sick tummies try adding a little lemon juice and leave out the salt and onion. This was the ONLY thing my Daddy could eat when going through chemo.

I thought this recipe was good, however, I thought it would have been just as good as a bowl of chicken broth. I'm trying to find a recipe similar to one of my fav restaurants, so I am being very picky! Thanks!

    LOVED it! I added the ginger as another recommeded, and served it with Easy cheese scones - in a hurry to my little sickies at home. Very soothing!

    This is exactly the way I make my egg drop soup, Mama...Excellent stuff! I play "Chinese Buffet" with my friends sometimes when we have dinner parties and there's never a drop left, but how easy is it when you crave it? I mean..who needs leftovers. We prepare all of our favorite foods from the Chinese buffet, including those little fried biscuits! I'm glad you posted so I didn't have to!
