Easy!!! Easiest Chicken Dinner Ever
SERVES 4
Ingredients
- 1 lb chicken tenders, raw
- 1 (16 ounce) can chicken broth
- 1 (10 ounce) can rotel
- 1 cup white rice, uncooked
- 1 cup cheddar cheese, shredded
- garlic powder
- salt & pepper
Directions

Using a large, deep skillet with a cover pour can of chicken broth and can of rotel into skillet.2
Stir in cup of rice.3
Lay chicken tenders on top of rice and sprinkle with garlic, salt and pepper. Go easy on the pepper if you don't like it too hot because the Rotel has a little kick to it.4
Cover and cook over medium high heat for 20 minutes or until chicken is opaque.5
Remove from heat and sprinkle with the cheese. Stir lightly until cheese melts slightly.6
Serve with a nice salad.

This was very yummy. The cheese was so good in the rice. I took the advice of other reviewers and added some additional spice, but other than that cooked to recipe directions. I tried to serve it in tortillas but that didn't work very well, the tortillas kind of blanched the flavor of the dish. I will make this again and again. Thank you!

Definitely very easy. I thought a full cup of cheese would be too much for this dish, but it turns out that it's the cheese that makes it. Without the cheese I think it would have been a bit bland. I used mild cheddar, but next time I might try sharp or a taco blend. I served this with black beans as a side dish, and the combo was perfect.

So glad I found this one! Healthy, cheap, couldn't be easier and very yummy! Instead of the Garlic Powder (somehow I was out!) I put in a packet of Ranch Dressing Mix. Kids loved it! This will be a monthly meal at our home.

I can't believe I forgot to rate this wonderfully easy and satisfying dinner. I followed the recipe exactly and it came out terrific. It was a tad spicy for us but none the less great. Thanks so much, I will be making this again for sure!
