Easy Crispy Cornflake Potatoes

One of our favorite ways to make potatoes and you generally have the ingredients on hand. It's out of a church cookbook by Suzanne Sachs

SERVES 6 (change servings and units)

Ingredients

  • 6 medium potatoes, peeled
  • 1/3 cup melted butter
  • 1 teaspoon salt
  • 1 cup crushed corn flakes or Rice Krispies

Directions

  1. 1
    Pre heat oven to 400°F.
  2. 2
    Cut potatoes into 4 wedges.
  3. 3
    Dip them in the melted butter and sprinkle with salt.
  4. 4
    Roll in crumbs and place on greased baking sheet.
  5. 5
    Bake for 40 minutes.
  6. 6
    Serve hot.

These were good; at another review's suggestion, I added some seasoning to the breadcrumbs, and you can really suit your own taste. The potatoes were crispy and soft at the same time; they were really enjoyed and will be made again. Thanks, Lori Mama, for sharing this yummy potato recipe.

    This got mixed reviews at my table. My husband loved them, I thought they were okay, and my son wouldn't eat them. It may be a texture thing since we have never eaten potatoes quite like this before. I think some extra spices in this would go a long way if I were to make again.

    Thjese were nice for something different, I also added some Italian seasoning to mine to go along with some Italian meatloaf, I especially liked the crispy bits that fell off the wedges onto the bottom of the pan..Mmmm!
