Easy Creamy Sour Cream Chicken Casserole

This is one of the first recipes I really "mastered" when I was learning how to cook. My husband got to enjoy this recipe at least twice a month because it was one of the few dishes I knew how to make. Now, that I'm a much better cook, we still have this delicious dinner on our menu at least monthly. It is so easy to put together and very good. If you like your casserole's creamy, then this is one you've gotta try! I hope you enjoy it as much as we do!

SERVES 4 (change servings and units)

    Preheat oven to 350°F.
  2. 2
    Boil chicken breast until tender; drain and cube.
  3. 3
    Spread evenly over the bottom of a square casserole dish.
  4. 4
    Salt and pepper to taste.
  5. 5
    Mix sour cream and chicken soup in a separate bowl.
  6. 6
    Spread the sour cream and soup mixture over the chicken in the casserole dish.
  7. 7
    Crush the Ritz crackers and spread over top of the casserole.
  8. 8
    Spoon melted butter on top over all.
  9. 9
    Bake in a 350°F oven until top is golden brown, approximately 20-30 minutes.

Pretty good, easy idea. Too much sour cream or something though. I felt like the chicken should have been the star, but it was swimming in too much liquid. I'll try it again but with less liquid.

    This was extremely good. I did have to make some changes since I'm now doing Weight Watchers. I used FF Sour Cream and 97% FF soup, and reduced fat Ritz crackers. I didn't even used the butter. I think everything worked well together with such few ingredients. My bf enjoyed it also and I can't wait to make it again.

    Oh wow! We had this for dinner last night and it was fabulous! And easy too! I cut my chicken into chuncks and cooked it in a skillet (I prefer this over boiling). The casserole was super yummy! My husband kept saying that it reminded him of fried chicken. It was so easy to make that I made a second batch to freeze. This is now one of my favorite chicken dishes. We all loved it here! Thank you for an easy and incredibly delicious recipe!

    YUM! We loved this easy and quick cassie! Makes a great weeknight meal, and, because I used canned chicken breast, it was even quicker! I served it up with Unemployment potatoes and Crackerbarrel green beans ... Terrific, KC! You posted another winner for me! Laudee
