Easy Cream of Wild Rice Chicken Soup

I found this recipe on a weight loss website. My family didn't even notice that it was made with fat-free ingredients.

SERVES 10 , 12 1/2 cups (change servings and units)

Ingredients

Directions

    Melt margarine and sauté onion, carrot and celery in a large saucepan until tender.

    Add flour and stir until blended.
  3. 3
    Stir chicken broth in gradually.
  4. 4
    Add rice, chicken, salt and pepper.
  5. 5
    Bring to a boil over medium heat.
  6. 6
    Cook and stir for approximately 2 minutes or until soup thickens.
  7. 7
    Stir in evaporated milk.
  8. 8
    Cook for five more minutes or until soup is heated through.

    This soup is absolutely awesome and is a staple in our home during cold weather. There's no indication in the texture or flavor that it's low fat. My whole family loves it and my teenage daughter always requests it when the weather turns cold. I also add about 2-3T chopped fresh chives before serving, which adds nice flavor. A MUST TRY recipe!!

    This soup is the best of everything - can be made in a flash with ingredients that I have on hand (all except for the rotisserie chicken); it's low-cal, and - best of all - it is SO DELICIOUS and SATISFYING. My version is also from a weight loss website, but I don't add evaporated milk. This is one of my favorite meals to make for other people, i.e. friends who have just had a baby, etc. I add a green salad and a good loaf of bread and it's a meal that anybody would love to eat, including kids. It's one of my Top Ten Greatest Recipes and it just happens to take so very little effort! Try it. You'll be glad you did!

    I have to write again, because I'm so thrilled with this recipe. Have made 6 or 7 times now, and just keeps getting better. I've found that it is the most flavorful when I use Zataran's brand wild rice, and I would also highly recommend adding the can of sweet corn. This is definitely a staple for me!
