Easy Butterscotch Chip Chocolate Cookies

These are soooo easy and quick to make and no one ever believes that they are not from scratch and that they start with a cake mix! These work with peanut butter chips, white chips etc. too.

36 -42 cookies (change servings and units)

Ingredients

  • 1 (18 1/2 ounce) package chocolate cake mix

  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups butterscotch chips
  • 1/2 cup chopped pecans

Directions

  1. 1
    Combine cake mix, oil and eggs in large bowl.
  2. 2
    Stir in chips and pecans.
  3. 3
    Chill for about an hour.
  4. 4
    Preheat oven to 350°.
  5. 5
    Roll dough into 1" balls and place on ungreased cookie sheets.
  6. 6
    Bake for 8-10 minutes or until centers are just about set.

    Let stand for a minute or so and remove to wire racks.

Tasty. However: too few pecans and too many butterscotch chips. Next time I would double the pecans and use half the recommended chips. It was difficult to shape the dough into balls because there were so many chips in the batter... and I only used 1 & 1/2 cups of chips!

    Easy is right! Promised to bring something to a bake sale and came home feeling too tired to break out the mixer and starting something from scratch. The final cookies were delicious and I trully doubt anyone will know that a few corners were cut. The pecans really make the chocolate and butterscotch come together so don't skip them — tosted mine first which heightened their flavor.

    I made these cookies for the fix-it man here at my apt. complex. Rusty is a sweet ole feller who really needs to retire because he has major heart problems and is in and out of the hospital about as much as me. I think sometimes fixing things around here, tho, keeps him going. So, I made him a batch of these cookies and put a big bow on 'em and he was thrilled. Thanks for an easy recipe for a dear man.
