Easy Broccoli Quiche

I'm always on the lookout for new ways to fix broccoli, since it is one of the few veggies my kids will eat. I got this off of the back of a frozen bag of broccoli. Easy and tasty.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Prepare broccoli and onions according to broccoli cooking directions; drain.
  2. 2
    Place cooked broccoli mixture in a lightly buttered 9" pie plate.
  3. 3
    Add mushrooms and cheese.
  4. 4
    Combine remaining ingredients in blender; blend until smooth.
  5. 5
    Pour over broccoli mixture.
  6. 6
    Bake at 375F for 25-30 minutes or until firm.

This was WONDERFUL!!! I am going to make with other veggies next time. Also, will try without the Bisquick to lower the carb count. Thanks for the easy and great recipe!

    I made this for Easter morning brunch. I doubled the recipe. I also used fresh broccoli instead of frozen. It was wonderful. I will be keeping this one in my book. Thanks for sharing! Fast and easy too!

    I like this recipe! Try it sometime with fresh asparagus!! (steamed until tender-crisp before adding) It also works well with fresh spinach!
