Easy Black Bean Soup

This soup is a favorite pantry meal for my family. Easy, easy, easy to make and nutritious. I got the recipe from the back of a soup can but have improvised this soup many times. Feel free to adjust seasonings as you like.

SERVES 4 (change servings and units)

Ingredients

    Saute onion in olive oil.
  2. 2
    When onion becomes translucent, add cumin.
  3. 3
    Cook 30 seconds, then add garlic and cook for another 30 to 60 seconds.

    Add 1 can black beans and 2 cups vegetable broth.
  5. 5
    Bring to a simmer, stirring occasionally.
  6. 6
    Turn off heat.
  7. 7
    Using a hand blender, blend the ingredients in the pot, or transfer to a blender.

    Add the second can of beans to the pot along with blended ingredients and bring to a simmer.

    Serve soup with bowls of red onion and cilantro for garnish.

    I add a bit of cilantro to the pot, too.

    Can be doubled or frozen.

My daughter brought home a book from the library that talked about "Mud Soup" and gave a recipe at the back. It's a little plainer than this one and used dry beans soaked overnight first. I added added the garlic and cumin this recipe calls for and also did the blending to smooth the soup a little. Added shredded cheese and sour cream at the table. Served with Quick Soft Breadsticks for a delicious meal!

    Great Recipe!! I followed the recipe exactly and it is hands down the best black bean soup i have ever had. Thanks!

    This was pretty good and very easy to make. I did not use the red onion but we topped ours with shredded cheddar cheese and light sour cream. I think if I made this again I would add some salsa to the blender.

    I used chicken broth in this soup and increased the amount of cumin. Topped with red onion and cilantro, this is a perfectly simple soup with tons of flavor. It is a great bonus that the prep was so simple.
