Easy Bisquick Chicken Pot Pie

This is from a Bisquick box. Great comfort dish after working all day. I make this with a Caesar salad and dinner is done!!

SERVES 6 (change servings and units)

Ingredients

  • 1 cup cooked chicken, cut into bite sized pieces
  • 1 2/3 cups frozen vegetables, thawed

  • 1 (10 ounce) can cream of chicken soup (I use low sodium)
  • 1 cup Bisquick reduced-fat baking mix (regular Bisquick will work too)
  • 1/2 cup nonfat milk or milk
  • 1 egg

Directions

  1. 1
    Preheat oven to 400°F.
  2. 2
    Mix chicken, veggies and cream of chicken soup together and spread into bottom of non greased 9-inch round glass pie pan.

    Mix remaining ingredients (Bisquick, milk and egg) and pour on top of chicken mixture.

    Bake in oven for 30 minutes or until top turns golden brown.

Perfect comfort food! I just made this last night and got up to have the leftovers for breakfast. I didn't let the veggies thaw, added a bit of milk and a dash of pepper to soup mixture as other reviewers suggested - It was delicious and SO easy!

    My SIL made this recipe for me about two years ago, and I've been making it ever since. I add a little milk to the soup, and also add a well-drained can of mushrooms sometimes along with the veggies ("california mix" is a good choice and the one I use most). Oh, a little poultry seasoning is a good addition, too. This is fast, easy, and very tasty — real comfort food!

    We make this recipe quite a bit in the fall and winter. It's great comfort food and very easy! I make it quite a bit for new mom's as well. It's an easy dish to put together and and easy dish to transport!
