Easy Beef Skillet Supper

An easy, quick but good beefy skillet supper. Adapted from Country Woman.

SERVES 8 (change servings and units)

Ingredients

  • 1 (8 ounce) package medium egg noodles

  • 1 1/2 lbs ground beef
  • 1 medium onion, chopped

  • 1 (8 ounce) can tomato sauce
  • 1/2 cup water

  • 1 (11 ounce) can mexicorn, drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded cheddar cheese

Directions

  1. 1
    Cook noodles according to package directions.
  2. 2
    Cook beef and onion until meat is no longer pink and drain.
  3. 3
    Add tomato sauce and water and bring to a boil.
  4. 4
    Reduce heat, cover and cook for 8 minutes.
  5. 5
    Drain the noodles and add to beef mixture.
  6. 6
    Mix in the corn, salt and pepper.
  7. 7
    Sprinkle with cheese, cover and cook until heated through and cheese is melted.

Very nice dish for a quick meal tonight. I did find it was missing something so I needed to add some garlic and a bit of Italian Seasonings to help give it a bit of kick. Family enjoyed it. I loved the ease of which I could get dinner on the table on a Friday night when I'm exhausted from a long week. Thanks for sharing. Tagged in 123 Hit Wonders!
