Easy Asian Beef & Noodles - Ww Recipe

This is delicious. It satisfies my craving for lo-mein. I have made with chicken and shrimp as well, just adjust the ramen noodle flavor to match. From WW cookbook Cooking for Two, it makes a HUGE 10 points serving. I am satisfied with 1/2 a serving.

SERVES 2 (change servings and units)

Ingredients

    Trim fat from steak; cut steak diagonally across grain into thin slice.

    Heat 1 Tsp oil in a large nonstick skillet over medium high heat.
  3. 3
    Add steak and green onions; stir fry 1 minute.
  4. 4
    Remove steak mixture from skillet; keep warm.
  5. 5
    Heat remaining 1 Tsp oil in skillet over medium high heat.

    Add slaw; stir fry for 30 seconds.

    Remove slaw from skillet and keep warm.

    Remove noodles from packages; reserve 1 seasoning packet for another use.

    Add water and remaining seasoning packet to skillet; bring to a boil.

    Break noodles in half; add noodles to water mixture.

    Cook noodles 2 minutes or until most of liquid is absorbed, stirring frequently.

    Stir in steak mixture, slaw, and soy sauce; cook until thoroughly heated.

This was awesome. I doubled the recipe and added 2 zuchini to it. I think when doubled, 3 packs of noodles would be plenty. Next time I would probably marinate the steak. I also think making this with chicken would be yummy.

    Easy is a good start for the title of this recipe because easy it is! But this recipe is not just easy; it is REALLY delicious as well. I doubled the recipe and between 4 adults and 2 little 2-1/2 year old twin girls we gobbled it up! I also left out the green onion and used onion powder instead. This really is the perfect weeknight meal as I went from having frozen steaks to dinner on the table in 25 minutes. Thanks KelBel posting this great recipe.

    The directions are very easy to follow. Dinner was done in no time. I used a shoulder steak and sliced it while it was partially frozen. Instead of the packaged cabbage and carrot coleslaw, I used regular cabbage and shredded it in the food processor as well as a carrot. I reduced the amount of oil to 2 teaspoons and added 1 teaspoon of Hoisin Sauce with the soy sauce. Thanks for posting!

    I just wanted to mention that I put the nutrition facts into my points calculator and came up with 18 points per serving. Beware that each pagckage of ramen noodles is actually TWO servings, and thus 16 points. Things must have been calculated differently when this recipe was first published. Sorry to be the bearer of bad news.
