I don't know why this is called Easter Cake, because it tastes delicious any time of year. It's very light and refreshing.

SERVES 16 (change servings and units)

Frosting

Directions

    Beat all cake ingredients together for two minutes (the oranges should be completely broken up.).

    Bake in a 9 x 13 inch pan at 350 for 30 minutes.

    Mix together frosting ingredients. Spread over cooled cake.

I am still in middle of making this and one HUGE issue is that recipe does not indicate whether or not to DRAIN the pineapple. Of course, too much liquid or too little can make or break it. Not sure how to proceed. Winging it! (draining)

    We made this for easter dinner, and it was a huge hit.we didn't drain the pineapple and it worked beautifully. It was a very moist, pretty and refreshing cake that made us feel like spring was on its way. It was a winner around the table. I am putting this one in my "favs own at home cookbook."

    Made this for Easter. It was a huge hit! Sent it to school in my sons lunch box and the teachers asked for the recipe. So easy to make and loved by young and old! I double it and made it into a layer cake.
