This is my family's favorite dish that I make. And it is sooo easy! It is enough for 6 adults. Or 2 adults and 2 kids, with more than enough to have for dinner the next night, and then lunch for 2 kids the next day. It's also good if you leave out the chicken.

SERVES 6 (change servings and units)

Ingredients

    Thaw spinach completely in a colander lined with a few paper towels.

    This may take a few hours.

    Squeeze spinach completely dry.
  4. 4
    Set aside.
  5. 5
    Cut up chicken into bite size pieces.

    Brown in a skillet.
  7. 7
    Keep warm.
  8. 8
    Cook penne according to package.

    Meanwhile, in a medium sauce pan, add both jars of sauce, tomato and spinach.

    Bring to a simmer on low heat, stirring occasionally.

    Continue simmering for 10 minutes or so.

    When pasta is done, drain and place in a large serving bowl.

    Add chicken and stir.
  14. 14
    Add Alfredo mixture and stir again.

    Serve right away with garlic bread.

I agree, this was very good. It made too much since it is just the two of us so I will probably use only one jar of sauce the next time. I also used fresh bagged spinach and will probably use only half the bag. Thanks for the great recipe.

    I know that the ingregients don't sound fantastic together, but it really does work. My kids loved it too! I was really concerned when I got a whiff of the opened can of Classico Aldredo, but once all ingredients are combined it makes a great meal. With the spinach and tomatoes I don't even make a veggie to go along side this. A big hit for the whole family, I recommend this one!

    This recipe was quite good. My husband and kids liked it alot. I think next time I will try a different sauce, perhaps the roasted garlic one, as I didn't really like the aftertaste of the sundried tomato one. Just a personal preference, though, this recipe is definitely worth making again and again.

    Wow! This was GOOD! It's amazing what can become of sauce in a jar! It had a 100% homemade taste too! I will never tell anyone that it came from jars and cans! Spectacular!
