EASY Manicotti

No cooking the manicotti, so that's the easy part. Sometimes I will add some frozen chopped spinach, cooked and squeezed dry. A real easy meal!

SERVES 4 (change servings and units)

Ingredients

  • 1 lb ricotta cheese
  • 4 ounces mozzarella cheese, grated
  • 3 tablespoons grated parmesan cheese
  • 1 teaspoon sugar
  • 1 egg, slightly beaten
  • nutmeg (to taste)
  • 1 tablespoon finely chopped parsley
  • salt and pepper

  • 1 (5 ounce) package manicotti, uncooked

  • 1 (15 1/2 ounce) jar prepared meatless marinara sauce (or homemade, if desired)

Directions

  1. 1
    Combine Ricotta, Mozzarella,grated Parmesan, sugar egg, nutmeg, salt and pepper to taste.

    Stuff uncooked manicotti generously with the cheese mixture, from both ends.

    Arrange manicotti in a single layer in a baking pan.

    Bring sauce to a boil and pour over manicotti, covering completely.
  5. 5
    Cover baking pan with aluminum foil, crimping the edges to seal tightly.
  6. 6
    Bake in a preheated 400* oven for 40 minutes.

    Remove foil, sprinkle generously with additional grated cheese.
  8. 8
    Bake uncovered for 5 minutes more.

I love this recipe! It is SO easy to make since you cut out the step of cooking the noodles. I usually mix the marinara with a little bit of water and I put more sauce than it calls for because we really like a lot of sauce. Delicious!!!

    This was super easy (once I found the Ziploc baggies) and tasted so good. As my 2 y.o. put it, mmm, mmm, good. And he's my picky eater! I made it exactly as the recipe stated, except I didn't have the parsley. I almost forgot, I added some extra sauce, so the noodles would be covered. It was awesome! I will use this and share it again!

    Very good and easy. I added spinach, half a red bell pepper and garlic to the filling. I had a 25-oz can of spaghetti sauce, and I'm glad I did, b/c I somehow wound up with enough filling for a 9x13 pan-full of manicotti! I put a small bit of sauce in the bottom of the baking pan before arranging the manicotti, and poured the rest over the top. It baked nicely, and DH & I both enjoyed this simple meal with a salad & garlic bread.

    Excellent manicotti and very easy to make! My kids loved it and ate the spinach filling without any fuss! I've made this twice and the 2nd time I didn't boil the sauce before pouring over the manicotti and I actually liked it better this way. The pasta came out al dente with a really nice texture and wasn't overcooked at all.
