Dressed up Italian Green Beans

Green beans were never a favorite vegetable of mine, until I tasted this version of them. Try to use fresh green beans, but frozen will work in a pinch. This is wonderful with asparagus also!

SERVES 6 -8 (change servings and units)

Ingredients

    Wash beans, trim ends and remove strings.
  2. 2
    Combine beans and water in a dutch oven.
  3. 3
    Bring to a boil.
  4. 4
    cover, reduce heat and simmer 6 to 8 minutes until crisp-tender.
  5. 5
    drain.
  6. 6
    Plunge into ice water to stop the cooking process.
  7. 7
    Drain beans and set aside.
  8. 8
    Saute mushrooms and next 7 ingredients in oil in a Dutch oven.
  9. 9
    Stir in beans and cook until thoroughly heated.
  10. 10
    sprinkle with Parmesan cheese.

Fantastic!! Thanks for sharing Yooper!! We found that 1/4 of EVOO was plenty, but we did use a little more salt. Will make this often.

    I loved the way the crunch of the green beans and the crunch of the water chestnuts complemented each other. My only changes were to add a grated garlic clove, to use about 6 leaves of fresh Basil, and to use only a sprinkling of parmesan. This recipe is definitely a keeper!

    Loved these beans - I cooked the beans in the AM got everything else ready and then just before dinner did steps 8, 9 and 10 - this recipe adds a new dimension to one o my favorite veggies Thanks yooper

    This is a tantalizing inexpensive sidedish that works well for potluck suppers and for company dinners. A little roasted garlic "kicked it up" for my family.
