I haven't tried this recipe so really can't rate it, but have to say since the recipe calls for chicken broth it is not a Dr. Fuhrman Eat to LIve approved recipe! It should say vegetable broth — it wouldn't need to be water to be vegan. There are plenty of tasty vegan vegetable broths out there.

This sounds good, but how much water or stock should be added? I've made lentil soup in the crockpot and it turns out awesome. Diced red bell peppers are a great addition--they add a little color.
