Double Cheese Soup

A nice cold weather soup. This is great for low carb diets.

SERVES 4 (change servings and units)

Ingredients

Directions

    Melt butter in saucepan.
  2. 2
    Add onion and celery, stir to soften.
  3. 3
    Add flour, to thicken.
  4. 4
    Slowly whisk in milk until smooth.
  5. 5
    Bring to a simmer.
  6. 6
    Add cheeses stirring until blended.
  7. 7
    Add salt& pepper to taste and garnish with chives.

I used smoked gouda and also at least doubled the hot sauce. After tasting, I thought the soup still lacked something so added some chicken bouillon granules. I added some homemade croutons when serving. Very nice soup for a cold night. Thanks for sharing.

    I have not tried this yet, but just wanted to add a comment based on the header... It says it is good for low-carb diets, but there are 16g per serving. Most low-carb diets recommend only 20g a day. Just a warning! You can try it without the flour and using soy milk. That would greatly reduce the carbs!

    This was so easy to prepare and had a wonderful flavor. The only thing I did different was I used white pepper and doubled the hot sauce. It made a good entree, but could certainly be a wonderful starter, good enough for guests! Thanks Chia for sharing!

    Excellent, rich and cheesey soup! I loved the smokey flavor of the gouda with the sweetness of the onions. Great appetizer soup. Best of all, it's sooooo easy to make! Thanx for sharing this recipe....I'll make this again.
