Here's a really impressive dish with hardly no fuss. Your guests will love it!

SERVES 4 (change servings and units)

Ingredients

Directions

    Gently pound chicken to 1/4 inch thickness.
  2. 2
    Heat olive oil, cook and brown the chicken on both sides for 10 minutes.
  3. 3
    Place in baking dish.
  4. 4
    Top each piece with a quarter of the brie and 2 T of the preserves.
  5. 5
    Sprinkle with the almonds.
  6. 6
    Bake at 400* for about 8 minutes, until cheese melts and chicken is done.

    My step-mother made this several months ago and highly recommended it. Finally, we made it for dinner this evening. Quick to prepare, and a very pretty presentation. I cut up the brie into smaller pieces so it would melt easier, and my oven time was a little bit longer (10 minutes). Thanks for a great recipe.

    Crunchy, salty, sweet, and savory beyond belief! Garlic Rondele was substituted for brie and made an excellent compliment to all of the flavors. Calorie counts were lowered with the use of Splenda sweetened Apricot preserves. Beautiful presentation and truly ideal for a dinner-party. Anyone with half-a-brain would be impressed. I was!
