A great recipe from Cooking Light! I love the fact that they are cooked in muffin tins - that way you can freeze easily the leftovers! And it looks cute on your plate!

SERVES 6 (change servings and units)

    Preheat oven to 350°.
  2. 2
    Heat the olive oil in a large nonstick skillet over medium-high heat. Add chopped onion, chopped carrot, dried oregano, and minced garlic; sauté 2 minutes. Cool.

    Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl.

    Spoon the meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 teaspoons ketchup. Bake at 350° for 25 minutes or until a thermometer registers 160°. Let stand for 5 minutes.

These were really easy to make, and fun! I will be making these again. I did not use the cooking spray as I didn't see a reason for it. I froze what was leftover and am looking forward to eating them for dinner when I don't have time to cook! Thanks for the great recipe

    A delightful recipe: we really enjoyed these mini meatloaves, and it is SO satisfying to also have some in the freezer! I was drawn to this recipe because I've made meatloaf and meatballs in muffin pans before and agree with several reviewers that the end result is... well, fun to make and most elegant to serve! I've never liked ketchup so I confess to having completely omitted it. Then I found to my dismay that I had no suitable crackers. Thinking cap time! It was I believe the inclusion of the carrots - which I'd grated rather than chopped - that reminded me of a long-lost meatloaf recipe that had among its ingredients both grated carrot and grated potato, so I added about a cup of grated potato. The recipe had just the right balance of oregano for us. Having omitted the ketchup, and wanting to add some extra flavour, I also added some thyme, and a squidgeon (a flat tablespoon) of sour cream - in step 3. Made for Zaar Stars Tag! A yummy, adaptable and most repeatable recipe: thanks for sharing it, Redsie!

    These are the cutest little meatloaf cupcakes ever. I wish I was feeding little kids again, because they'd get such a kick out of them. I made them even lighter using ground turkey, Eggbeaters and oatmeal instead of Saltines. Delicious! And they'll make you laugh because they're so cute.

    Big Hit for my guys.. I doubled up on the veggies, used 1/2 BBQ sauce, 1/2 Ketchup, also used ground turkey instead, rolled oats instead of the saltines, and 1 egg and 1 tbs. of Flax Seed (because I only had 1 egg) Lastly- I added in some Johnny's Seasoning Salt and they were YUMMMMMY!
