My very picky traditionalist husband not only loved this recipe, but now insists I make it all the time instead of the old-fashioned recipe. I think it came from Southern Living magazine.

SERVES 4 (change servings and units)

Ingredients

Directions

    Place milk& butter in a medium bowl.
  2. 2
    Cook potatoes in boiling water to cover, 15 minutes or until tender; drain.
  3. 3
    Mash with milk& butter in the bowl.
  4. 4
    Stir in remaining ingredients.
  5. 5
    Serve immediately.

To make these lighter, I used low fat milk and sour cream, and margarine instead of butter. They still were delicious!

    This once again proves you don't need a lot of expensive ingredients and complicated steps to produce a great tasting dish. These "taters" really hit the spot. The dill adds nice color and flavor. It will be fun to experiment with other herbs too. Thanks for sharing, evewitch!

    Sometimes it is little additions like this (the dill) that make such a surprising and subtle difference. The mashed potatoes were much more visually appealing too. Thanks, evewitch!

    I doubled the recipe and glad I did. Used 2 tablespoons fresh dill and was great. Nice and creamy!
