A great quick side dish - this takes almost no time to get set up.

SERVES 4 -6 (change servings and units)

Directions

    Combine all ingredients except for potatoes.

    Place the potatoes in a greased pan and toss with the mixture.

    Bake at 425 degrees for 35-40 minutes.

    I followed the recipe exactly, and I have to agree with a previous reviewer who said that these needed a bit more time in the oven. The flavor, though, is nice — something a little different. I had some leftovers, and I have a feeling they're going to make great homefries.

    We love our potatoes, their versatility means that they never have to be boring. This recipe proved that, we all enjoyed them. Nice subtle taste. This is a keeper.

    Ooooh, what yummy potatoes. I put all the ingredients in a bowl and mixed them up. That made it easier for me to get the potaotes coated well. Then I put them into the baking dish. I baked at 400 degrees because my oven seems to burn everything. They turned out perfect. I thought the dijon flavor was tangy and sooo delicious. Thanks ChrisMc
