I am on a rather strict diet at the moment, and came up with this yummy dessert that meets the letter of the 'law' if not the spirit! Be sure to use pineapple in its own juice, NOT pineapple in syrup. Cook time is chill time - this is very quick to make.

SERVES 6 (change servings and units)

Ingredients

    Mix the pineapple, with its juice, the soymilk and the tapioca in a medium sized pot.
  2. 2
    Heat over medium heat, stirring frequently.
  3. 3
    Once it begins to simmer, turn it down and continue stirring, until thickened, about 10 minutes. There should not be any white specks left in the tapioca.

    Remove from the heat and stir in the vanilla.
  5. 5
    Divide amongst small serving dishes and garnish with a few berries if desired; blueberries, strawberries or raspberries would all be good.

this was okay, but probably not something I'd make again. There was just something "off" about milk and pineapple together for us.

    This was divine, Jenny! I had this in my cookbook so when I happened to notice the minute tapioca at the store I bought it specifically for this recipe. I love the sweet but not overpowering taste and the texture of the tapioca is lovely. Thanks so much!! I have added no sugar added/no fat addes granola to the top and I like that crunch along with the wonderful flavor of the pineapple and the creaminess of the tapioca. Yum!

    We really enjoyed this yummy dessert. We are on a pretty strict diet- no oils, fats, refined sugars... so this fit the bill. The pineapple that we used was not very high quality so there were some hard chunks and seeds. Since pineapple is the main ingredient, I highly suggest splurging and getting the hightest quality you can find. Thanks for this recipe- we will make it again.
