Diet Cola Chicken

Very simple to prepare but very tasty.

SERVES 4 (change servings and units)

Ingredients

  • 4 chicken breasts
  • nonstick cooking spray
  • 1 cup ketchup

  • 1 (12 ounce) can diet cola (I hear diet orange soda works well also)

Directions

  1. 1
    Spray your pan with cooking spray.
  2. 2
    Place chicken breasts in pan.
  3. 3
    Brown lightly on each side.
  4. 4
    Mix Ketchup and Diet Cola together.
  5. 5
    Pour over chicken.
  6. 6
    Cook for about 45 minutes or until chicken is tender.

    Very Yummy!

I actually make this all the time but instead of adding ketchup I boil tomatoes and then put them in the blender with 2 chipotle chile's in adobo and 1/4 cup water. Blend for about 2 minutes and add to the chicken. Its spicy and sweet

    I loved this chicken! It sounds weird, and my boyfriend definitely wasn't keen on the idea, but we both agree that it's great! I made it with regular Coke, not diet, and it was really good. I don't know if I would try it with diet because of the artificial sweetener flavor. Also, I took note of the other reviews and only put about 2/3 cup ketchup and 1/3 cup ultra-concentrated tomato paste. A bit of garlic powder is also a good addition!

    This was very good and easy! I browned the chicken in olive oil & I made it fit my diabetic eating plan by substituting a small can of tomato sauce and a tablespoon of splenda in place of the ketchup. I used lemon pepper, seasoning salt, Mrs. Dash, and black pepper for more flavor.

    I have made this several times now. Sometimes I follow the recipe exactly, or else I use pureed tomatoes and sugar substitue instead of the ketchup, and I add onions to the sauce. Whichever way i do it everyone enjoys it and asks for more.
