Delish Sweet Potato "fries" Low Fat

This is a very simple and yummy way to get even the fussiest eater to enjoy the sweet potato.

SERVES 4 (change servings and units)

Ingredients

    Preheat oven to 375 degrees.
  2. 2
    Quarter the potatoes and cut into 1/4 inch thick strips, too thin -- they will burn!
  3. 3
    Spread potatoes on a lightly oiled or sprayed baking sheet, sprinkle with oil and seasoning and toss to coat.
  4. 4
    Bake in the lower 1/3 of the oven for 30 minutes stirring occasionally.
  5. 5
    Season with salt, if desired.

These were soooo good! I usually make my sweet potato fries really thin because I do like when they get a little crispy. However I left these pretty thick and they were so good, a little crispy on the outside and very moist and delicious on the inside. Besides the cajun seasoning, I also used a little pumpkin pie seasoning, it was really, really good. I cooked mine at 400 for about 50 minutes and they were PERFECT.

    These were very tasty. I baked them for about 40 minutes, and the potatoes were done, but next time I'll leave them in a bit longer to see if I can get them to crisp up a bit. Used Emeril's Original Essence, and served with Dip for Sweet Potato Fries. Thanks for posting!

    Wonderful spuds! I added in a bit of brown sugar to try and appeal to my kids. It worked on one of them! Thanks Mama!
