Delicious and Healthy Chocolate Pudding

This is a really good, healthy, low fat, low calorie dessert. If you make it with Splenda it's only 1 point!

SERVES 4 (change servings and units)

Ingredients

    Lightly beat egg whites in a small bowl.

    In a large bowl, mix together cocoa and cornstarch.
  3. 3
    Add 3/4 cups of the milk and whisk mixture until it's smooth.

    In a large saucepan, mix together the rest of the milk, the Splenda and the salt.

    Bring to a boil over high heat, whisking continuously.

    Remove from heat.
  7. 7
    Whisk the cocoa mixture into the milk mixture.

    Bring to a boil over medium-high heat.
  9. 9
    Boil for 2 minutes while whisking continuously.

    Remove from heat.

    Slowly whisk 1 cup of the hot cocoa mixture into the egg whites.

    Pour this mixture back into the pan and cook over medium-high heat, whisking continuously.

    and being careful not to allow the mixture to boil.

    Remove from heat.

    Add vanilla.

    Mix well.

    Pour into 4 serving dishes.

    Cool to room temperature.

    Cover with waxed paper that has been cut to fit the serving dishes (this prevents the pudding from getting a skin).

    Refrigerate for 1 hour.

    Garnish with berries, mint leaves and cocoa.

Very easy recipe and it tastes delicious. I decided to substitute the unsweetened cocoa with ghiradelli's hot chocolate mix and went easy on the sugar because the mix includes sugar. The results were delicious and it gives me the chance to get rid of the many containers of hot chocolate mix that I have hanging around.

    Ok--I just made this and I am Licking the bowls! I also used a whole egg and sugar. If you like on the sweet side, add a bit more sugar, but this is great. Personally, I loooove the skin, and remember it from childhood.

    I have been looking for a long time for a homemade chocolate pudding recipe that was a "keeper" - this is the one! Very good - I used one whole egg instead of 2 egg whites, and regular sugar instead of Splenda. Thanks, Dreamer! Made for Bev. Tag April 2006.

    oh yum!!! i am sure i tagged it for a game but i cant remember which..eek. However this is a terrific chocolate pudding and does not taste low fat low cal at all! I have been on a chocolate kick, and glad i did not miss this one
