    Place cucumbers in non-reactive bowl. Mix vinegar, water, sugar, salt and pepper; pour over cucumbers.

    Cover and refrigerate, stirring occasionally, at least 3 hours.

    Drain; sprinkle with dill weed.

used 3 european cucumbers added thinly sliced red onion (3/4) in the rest followed keept the rest the same

    Total winner of a recipe. Love them. The cider vinegar really makes the dish. I used dill, not parsley. THANKS for a fabulous recipe that I will definitely make again! Made for Veg*n Swap 3.

    Loved these cucumbers! I doubled the recipe and added some dill to the cucumbers while marinating. Sprinkled more dill again after draining and enjoyed them with a sandwich for lunch!! Thank you Bethie for a great recipe!
