Curry-Orange Country Pork Ribs

Spicy country pork ribs, cooked in the oven. Served with a peanut dipping sauce. Prep time includes marinating time.

SERVES 4 (change servings and units)

Ingredients

Spicy Peanut Sauce

Directions

    Combine the orange juice, onion, garlic, brown sugar, curry powder, ginger and red pepper.
  2. 2
    Place the ribs in a large glass pan and pour the marinade over. Cover and refrigerate about 8 hours or overnight, turning ribs over a couple of times.

    Preheat oven to 325°F.
  4. 4
    Coat a large baking pan with rack with non-stick cooking spray.
  5. 5
    Remove the ribs from the marinade; reserve the marinade.
  6. 6
    Place the ribs on rack in baking pan, cover with foil and bake 1 hour.

    Uncover and sprinkle with the salt and pepper and continue baking another 45 minutes, basting occasionally with the marinade.

    Serve with Spicy Peanut Sauce.

    SPICY PEANUT SAUCE:.

    Stir together peanut butter, yogurt, soy sauce, sesame oil, hot chili oil and curry powder. Slowly add boiling water, stirring until smooth.

    Serve immediately.

I marinated these for about 20 hours and made everything as listed. We have none left and they were delicious! I think I would cut back a bit on the peanut butter because it was pretty thick. Tasty as heck though! My DS used a lot of it on his Never Fail Perfect Cooked Rice that we had with the ribs. Made for Fall PAC. Thanks!

    Mikekey, I love your recipes and this one is no exception, it is just wonderful. Apart from waiting for it to marinate, it is very quick and easy to put together. Tonight I had my inlaws arriving after an International holiday so decided to serve it with mashed potatoes and peas. There were no leftovers! Thank you for posting another yummy recipe.
