Didn't have any arugula or onion on hand, but still tasted very good. Served as a side for Asian-Style Grilled Tilapia (Asian-Style Grilled Tilapia).

A nice combination of flavours that made a tasty lunch - I didn't have any rocket though and I halved the amount of couscous. Thanks!

Wow, I am learning to translate Australian to American just by reading this recipe! ; ) I learned: a red capsicum is a sweet/bell pepper, baby rockets are arugula, and spring onions are green onions. (And I thought we spoke the same language. LOL) This recipe looks looks good, and I can't wait to try it. Thanks, Mandy!

What an awesome lunch! I used tuna with tomatoes and onions, rather than plain, and I subbed spinach for the rocket. This is great because it uses ingredients we always have on hand. I halved the recipe, and that still made 4 servings for us. Definite keeper!! Thanks Mandy!
