Curried Lentils

This recipe might sound a little strange but if you fix it once you will fix it often. It also freezes fine.

SERVES 6 (change servings and units)

Ingredients

Directions

    Wash and sort the lentils and cook until they are tender but firm.
  2. 2
    4 cups of water High Heat 10 minutes and low/medium heat 15 minutes.
  3. 3
    Heat the olive oil in a large skillet.
  4. 4
    When it is hot, add the garlic and saute over moderately low heat for 1 minute or so until leaves are wilted.

    Add the lentils and the remaining ingredients to the skillet.
  6. 6
    cover and simmer over very low heat for 15 minutes.
  7. 7
    This is good over mashed potatoes, rice or couscous.

Just whipped this up and it's delicious. Quick, very flavorful, and healthy to boot. I added a few red pepper flakes for some heat and it really hits the spot on this crisp fall day. Thanks for a new favorite!

    These were great-- I added carrots, celery, onion, and 4 slices of bacon. Tossed in 1 Tbsp red wine vinegar at the end. They were wonderful over mashed potatoes (I intended to serve over rice, but didn't have enough!). Thanks for posting!

    This was SO flavorful. The colors, textures and aromas were divine. I absolutely LOVE this dish. (I used tamari instead of regular soy, about 14 oz of spinach and a few extra dashes of all the spices). I served it over sun-dried tomato/ spinach couscous. This is a very healthy meal...not to mention super inexpensive; I couldn't have spent more than $5 at the grocery store. You have to love that!

    Fantastic flavor! It's great as is, but I did add a few of my favorite things - a sprinkle of cardamom and fresh cilantro on top. My favorite way to eat this was in a whole wheat tortilla warmed up and topped with crumbled goat cheese - Heavenly!! I've been eating it for breakfast, lunch and dinner!
