Curried Chicken Salad

After 2 years of begging, my roommate finally wrote this recipe down for me. It was a hit at our housewarming!

SERVES 4 -6 (change servings and units)

Ingredients

  • 3 cups cooked chicken breasts, shredded (I use 2 12.5 oz. cans of chunk chicken breasts and drain)
  • 1 1/2 cups celery, chopped
  • 1/2 cup mayonnaise
  • 1/2 cup ranch salad dressing
  • 1 1/2 teaspoons garlic powder (or more to taste)
  • 1 tablespoon curry powder (or more to taste)

  • 1 (2 ounce) package slivered almonds

Directions

  1. 1
    Combine all ingredients in a large bowl and mix well.

    Serve as a sandwich on croissants or over mixed greens.

Made this into a delicious sandwich!! Used some BBQ chicken I had. Loved the mix of ranch salad dressing and mayo!! Thanks rickoholic!

    This was good. I cut it in half, just for me, and it does make 2-3 servings. Used leftover chicken and no almonds (didn't have slivered). This was easy and the curry powder (I used the lower amount) was just right. The flavor was great.

    This makes a nice, big batch and the curry intensity was perfect. I left out the ranch dressing because no one in the family likes it so I added some lemon juice and extra mayo to replace the liquid and a bit of salt that the dressing would have provided. I particularly like the way there is plenty of celery because I like a lot of vegetable and crunch in my chicken salad. We put it into wraps with some lettuce and the kids ate every bite.
